Proper viscosity of the oil contributes to easier start-up. The oil must be thin enough to flow quickly at the relatively cold temperatures of start-up, yet thick enough to protect the engine at normal operating temperatures. If it is too thick at cold temperatures, it can create so much drag that the engine will not start or have adequate lubrication. If it thins out too much at high temperatures, it can't protect the engine during normal operation.
